Serves 4

• Potatoes (freshly cooked) 1 and 1/2 lbs
• Melted butter 4 tbsp
• Spring Onions bunch,
• (or 2 leeks) chopped
• Gold Top Milk 275 ml
• Salt & Pepper to season

1. Chop the spring onions, or leeks, add to the milk and cook gently
2. Drain – reserving the milk
3. Mash the pre-cooked potatoes, add seasoning to taste
4. Add the cooked spring onions or leeks
5. Beat well and add sufficient milk to make the potatoes creamy and smooth
6. Turn into a deep, warmed dish, make a well in the centre and pour in the melted butter
7. Re-heat gently and serve
(herbs can be added for extra flavour, e.g. parsley or chives)
